— Worked up a Travel Update and it snowed!
It was 36°F (2°C) when we we got out of bed, and that was the high for the day! J made a big breakfast of Denver omelets and potatoes, and I made the toast. :) The omelets were heavy on the ham, and I loved it! After doing the dishes, I purchased and downloaded an upgrade to Parallels Desktop 5 for Mac. It's a piece of software that lets different operating systems run on top of Mac OS X. I use it to run Windows Vista (egads!) so I can test websites with Internet Explorer v7 and Firefox and Opera for Windows. I used to also run Windows XP and Internet Explorer v6, but I had originally installed XP using Apple's Bootcamp, and lost that setup when I upgraded my MacBook Pro. I might create a Windows XP virtual machine in Parallels Desktop when we return to the Denver area and I can get my Windows XP CDs from storage. While downloading and installing Parallels Desktop, I worked up a blog entry.

J's Red Wine Vinaigrette

  • 1/4 cup olive oil
  • 1/4 cup flax seed oil (if you don't have this, then substitute 1/4 cup olive oil)
  • 1/4 cup red wine vinegar
  • 2 tbs lemon juice
  • 2 cloves garlic, minced
  • 1/2 tsp freshly ground black pepper
  • 1 tbs fresh oregano, minced, or 1 tsp dried oregano
  • 1 tbs fresh basil, minced, or 1 tsp dried basil
  • 1 tbs Dijon-style mustard
  • 1 tsp sugar
  • 1 tsp salt
Mix all ingredients well in a jar by shaking.
I made a batch of J's Red Wine Vinaigrette as the first step of making J's Bean Salad. Unfortunately, we only had three of the four beans required for the salad, so that project didn't get too far. :(

Had lunch at 12:45 of Private Selection (Kroger Brand) Black Forest Ham and Swiss on Chompie's Original New York Deli Style Jewish Rye. I love that bread! We picked it up at a Fry's Food Stores in Tucson, and it's the first time I've had it. The bread is nice and dense, and the slices are thick — almost too thick. My usual rye bread is Oroweat Dill Rye, but lately it's been getting fluffier and fluffier, so it's not as good as it used to be. It started snowing. The snow started to lay around 1:30, and it was 31°F (-0.5°C)! J went outside to photograph the Gambel's quail and cacti in the snow. The snow eventually blanketed the ground so it was completely white. Pretty neat for being in the desert, but we are at 4,060 ft (1237m) here. The snow stopped around 2:30 and changed to light rain as the temperature rose above freezing. The snow was gone by 3:30.

After lunch, I worked on a Travel Update, a periodic newsletter I send to family and friends. They started as text-only updates from my initial travels back in 2001, and grew to include images.

I made dinner of Bertolli Shrimp Scampi & Linguini and Texas Toast around 5:55. The Texas Toast didn't quite get done, and it was on the cool side. :( I had left the oven on, at a lower temperature, just in case it wasn't done, but I forgot about it. The oven was still on when we went to bed around 10:00! :)

I finished the Travel Update and sent it off.

Thanks for the receipt I'll give it a try. Lots of snow here but today it started raining...YUK...now it will freeze tonight and all the roads will be glazed , not good. Take Care you two and Travel Safely...ra

Thanks RA. Glad we don't have to deal with your current weather. We wish we would have stuck around just a little longer when we were up there so we could have photographed the fall color in the Matanuska valley. Give Tootie a scratch behind the ear for me.
